Bamboo Vinegar
Bamboo vinegar is called ‘chikusaku’ in Japanese. It is collected from the condensation that occurs during the production of bamboo charcoal. It is comprised of 80% water and 20% organic compounds. Many of these compounds have a pH below 7 giving bamboo vinegar an acidic nature similar to vinegar: hence the name ‘bamboo vinegar’.
To make bamboo vinegar bamboo culms are placed in a kiln and heated. The vapor that escapes is captured and cooled. This liquid is a yellow color and has a sour taste. The liquid is then subjected to a filtration process. The result is bamboo vinegar. Although it is called ‘vinegar’, it is not a substance that can be used for cooking.
